π§ Ingredients:
- 1 leg of lamb (about 2β2.5 kg / 4.5β5.5 lb)
- 3β4 garlic cloves, sliced
- 2 tablespoons fresh rosemary leaves
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt and freshly ground black pepper
- 1 cup lamb or vegetable stock (optional, for moisture)
π³ Instructions:
- Preheat oven to 180Β°C (350Β°F).
- Prepare the lamb: Make small cuts all over the meat. Insert garlic slices and rosemary into each cut.
- Season: Mix olive oil, lemon juice, salt, and pepper. Rub this mixture all over the lamb.
- Roast: Place the lamb in a roasting pan. Pour stock around the base if using. Roast for about 1 hour 45 minutes to 2 hours, depending on how well done you like it.
- Rest: Let the lamb rest for 15β20 minutes before slicing.
