Ingredients:
- 2 kg pork shoulder or Boston butt (with fat)
- 250 g smoked bacon
- 2 medium potatoes (grated)
- 1 large sweet onion (grated)
- 4 cloves garlic (minced)
- 1 tbsp dried marjoram
- 1 tsp dried peppermint (optional)
- 1 tbsp sea salt
- 1 tsp freshly ground black pepper
- Natural hog casings (soaked and rinsed)
