🌶️ Smoky Romesco Sauce

Ingredients:

  • 2 large roasted red capsicums (or jarred roasted peppers)
  • 1/4 cup toasted almonds
  • 1 garlic clove
  • 1/4 cup olive oil
  • 1 tsp smoked paprika
  • 1 tbsp red wine vinegar
  • 1 slice stale bread
  • Salt and pepper to taste

Instructions:

  1. Blend roasted capsicums, almonds, garlic, olive oil, smoked paprika, vinegar, and bread until smooth.
  2. Season with salt and pepper.
  3. Adjust consistency with a splash of water if needed.
