‘Marry Me’ Tuscan Chicken Gnocchi Soup

- Sear the chicken: In a large pot, heat olive oil over medium heat. Add chicken and cook until golden brown. Remove and set aside.
- Build the flavor base: In the same pot, sauté onion until soft. Add garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute.
- Simmer the soup: Pour in chicken broth, heavy cream, sun-dried tomatoes, and Dijon mustard. Stir well and bring to a gentle simmer.
- Add gnocchi: Return chicken to the pot. Add gnocchi and cook for 5–7 minutes until they float and are tender.
- Finish it off: Stir in spinach and Parmesan. Cook until spinach wilts and soup thickens slightly.
- Serve hot: Season with salt and pepper. Garnish with fresh basil and extra Parmesan.
