Prep the bagels: Slice a thin layer off the top of each bagel. Use a knife to outline the center, then press the inside down to create a well. (No need to tear it outāless waste!)
Make the filling: Whisk eggs and cream until smooth. Stir in sausage, bacon, onion, cheese, salt, and pepper.
Fill and bake: Spoon the mixture into each bagel well. Place on a baking tray and bake at 375°F (190°C) for 12ā15 minutes, until the filling is set and golden.
Garnish and serve: Sprinkle with fresh chives and serve hot with your favorite dip.
